Happy New Year Z Land!
I refuse to make another weight loss resolution this year, but instead I am committing to cooking more at home. That tends to lend itself to healthier meals. Also, my time in the grocery store aisles and my kitchen is therapeutic for me. I think really my resolution is to make more time to be still this year. To enjoy life and the people and things I love to do more because time just keeps flying by. I remember my dad telling me just you wait, when you get older, the years seem to fly….he was right. One way I can definitely have more time with the people I love is to figure out easy meals that allow us to sit down at the table more together. That’s what this collection of recipes will hopefully do for you, too! 🙂
Roasted chicken in the crockpot is super easy…throw in 3 or 4 frozen chicken breasts, sprinkle whatever seasoning you’ve got in the pantry over the top, add a splash of chicken broth and cook on low all day while you are at work. You’ve got a comfort meal that you can serve with your favorite veggies or a salad when you get home at night.
Fresh Chopped Salads are great to serve with everything, but they always get kind of mushy after a day in the fridge. A few things that I find helpful to keep my salads crisp is to keep the ingredients separated! When we aren’t hangry (usually after dinner lol 🙂 ), I’ll take the time to wash my lettuce, cucumbers and tomatoes. I’ll chop them all, but I’ll keep them in my fridge in separate air tight containers. When I want a salad, I get my bowl out and add the amount of lettuce and toppings I need to my bowl and the rest stays separated and goes back in my fridge. I also never put salt on anything for storage, because it draws out the moisture and makes everything soggy. I do add pepper to my lettuce. It gives it a great flavor and my lettuce always stays crisp!
