Carol’s Sloppy Joe Biscuit Cups

Fall is finally in the air here in Central Florida, which means we want warmer, comfort food…finally!!! 🙂 I don’t know about you, but I feel like this crazy hot weather is getting ridiculous. Growing up, comfort food meant quick and easy meals with not a lot of ingredients. I’m grateful my mom set aside time at the end of very busy, long days to make dinner for us all to enjoy together. Those are the nights I remember most when I’m making dinner for my own family now.

So today’s Quick Family Recipe is seriously quick…four ingredients quick. We’re making Sloppy Joes, but with a very fun twist. Remember those canned Grands Biscuits we all grew up on? Well, tonight we’re making edible bowls out of them that you stuff the sloppy joes in and smother in cheese. Are you hungry, yet? LOL…let’s get started!

  • 1 lb Lean Ground Beef (Ground Chicken or Ground turkey works, too)
  • 1 Can Manwich Sloppy Joe Sauce (You can find it in the canned chili aisle)
  • 1 Can Grands Biscuits
  • 1 Package Shredded Cheese

How to Make It:

  • Preheat oven to 350 Degrees Fahrenheit
  • Take a non-stick muffin tin and flip it over

  • Spray it with PAM non stick spray

  • Take a biscuit and form over each individual muffin tin to form a bowl

  • Bake for 10-12 minutes
  • Pull out of oven  and remove biscuit cups
  • Flip pan over or grab an oven safe glass casserole dish and place the biscuit cups right side up

  • Brown and chop up your hamburger meat in a large skillet. When met is cooked, drain off excess grease and add meat back to the skillet.

  • Mix in an entire can of manwich sloppy joe sauce and let it heat through

  • Place a scoop of sloppy joe mix in each biscuit cup and cover with shredded cheese

  • Place back in the oven until cheese is melted…everything is already cooked, so you are just melting the cheese at this point.
  • Remove from oven and they are ready to eat!

  • Enjoy!

We’d love to see  your family jumping in the kitchen together to make dinner. Head on over to Ellis and Tyler’s Facebook page to share your pictures.
