Carol’s Crockpot Chicken Noodle Soup

Sometimes we just need comfort food. And sometimes our babies go back to school and bring home colds and flu this time of year…that sounds like a job for the classic chicken noodle soup!!!

But, we’ve been missing out, ya’ll. We’ve all grown up on that canned stuff that just tastes like salt.

I didn’t realize how easy it was to make on our own and how much better it tastes when we do. Seriously, not just a little bit better, but out of this world better.

So, get your crockpots out, and let’s make some homemade chicken noodle soup together!

It’s super easy and it starts with you buying a whole rotisserie chicken to enjoy for tonight’s dinner. Then we are making our own soup with the bones you leave behind…I know that sounds weird, but trust me, that’s how you make stock and it’s super uber easy! Two dinners for the price of one! 😉 If you are low carb, just leave out the noodles.

Ingredients:

  • Rotisserie chicken (eat dinner but save one chicken breast for the end and all the bones)
  • 12 cups of water
  • 1 Tbsp Salt
  • 1 Tbsp Pepper
  • 1 Tbsp Thyme
  • 1 Tbsp Oregano
  • 1 Tbsp Parsley
  • 2 Sprigs of fresh rosemary (that I had left in the fridge from last week’s recipe)
  • 5 Chopped Carrots
  • 1 Onion Chopped
  • 4 Cloves of Garlic Chopped
  • 5 Chopped Stalks of Celery
  • 10 Minutes Before Serving Add:
  • Chopped Chicken Breast (that was reserved before starting your soup…it’s already cooked because you bought a precooked rotisserie chicken)
  • 1 Bag of Egg Noodles (Optional)

How to Make It:

  • Throw the entire chicken in after you’ve cut off all the meat that you can (reserve the one chicken breast for the end).

  • Seriously, throw all the ingredients above into your crockpot and cook on low all day. No, I’m not joking! That’s it!

  • Mix everything together with a spoon, place the lid on top and turn on low for 8-10 hours.

  • About 15-20 minutes before you are ready to eat, take a spoon with slits in and take out all the bones and all the stalks from rosemary and anything you don’t like left in your soup.

  • Once ready, add a package of  egg noodles to make this chicken noodle soup and chop up the chicken breast you reserved. Add it to your crockpot for about 10-15 minutes (whenever your noodles are soft, your soup is read to serve)! I chose just to make chicken soup, so I made mine without noodles.
